The Tabasco Sauce scene was chosen because it shows how Mrs. Baxter assumed because they lived near Mexico that they must like spicey food. This is similar to The Danger Of A Single Story. She thinks that everyone there eats spicy food, which Lucia clearly does not. She spits it out right away because it is too spicy. When Mrs. Baxter realizes that Lucia and Frankie do not like spicy food, she shows empathy and respect.
This is why the Tabasco Sauce scene was chosen.
